Egg-white omelette with pico
2-4 Egg whites or table spoons (carton or broken)
+ Cheese of choice...( Non-processed) 1 table spoon. Ex: feta, part skim mozzarella, Parmesan, cheddar....
+ Veggies... Spinach, kale, asparagus, broccoli...
+ Toppings: fresh pico, avocado, Greek yogurt, salsa.
Spray a skillet with non-stick cooking spay or olive oil. Pour egg white in pan over med heat. Cook until most of the liquid is firm then add veggies, cheese. Fold over. Plate, top and enjoy!
Egg whites are packed with protein and very low in calories and fat! This recipe uses only the whites, however; one yolk is a very a healthy choice! Do not use all 4!
*3 egg whites have 60 calories, 15g of protein, 0 fat and 0 sugar!
